Recipe of the Week - Avocado and Cucumber Soup

This green, chilled soup is an excellent way to keep your blood alkaline (assists in cancer prevention), take in highfiber as well as vitamins, minerals, antioxidants and healthy fats. The taste is surprisingly good. This is an excellent staple in any household. Feel free to add various greens from your fridge.

Ingredients:

English cucumber - peeled, seeded and roughly chopped
2 large ripe avocadoes
2 green onions, roughly chopped
2 apples (crisp and tart apples like Granny Smith or Spartan)
2 ½ cups coconut milk
2 Tbsp freshly squeezed lemon juice
Parsley or cilantro for garnish In a blender, process all ingredients until smooth.
Chill until ready to serve and garnish with fresh herbs.
